You can set the order of child items as follows:
- Click on Pages
- Click on Quick Edit for the child page whose order you want to change
- Set the order (0 is displayed first)
- Click Update

I fixed the order of capacity building a little while go after IIB fixes but I haven't looked into collaborators yet. I will have a look after the sticky veggie images
