Rohan, this might be as simple as deleting the other page templates from the parent theme. Extra points if we can remove the option to select a template completely from the backend. Then we don't really need to deregister the templates.

Ian, I don't want to just delete the templates from the parent theme, as they will come right back when you update the theme.

I've added a bit of code that will remove the option to select a template. It will from now on default to the page.php template.

One problem is that if you've set a template already for a page, you will not be able to change that template, as the dropdown to select them will be gone. The frix is that at the bottom of functions.php there is a filter you can comment out for a second and that will bring back the template dropdown.
